The coffee beans will stay green for the first few minutes and then they turn a light yellow color.  After the internal water is dissipated, you will hear a cracking sound.  This is nothing to worry about. The roast is just starting to happen. The cracking sound happens because sugar gets caramelized and the water  that is in it escapes.  Usually the roasting is thought to be complete once you hear the first crack. Fragrance can also give you a cue about the end of the roasting process.  When the coffee beans start to expand in size they turn dark.  Sometimes, more cracking blows tiny pieces of the beans away. Finally the roasting process completely breaks down the coffee bean structure.
